A Simple No-Cook Dinner (Sweet Corn, Garbanzo, Avocado, Mango)

On the first night of the voyage, we anchored in a calm bay that was unexpectedly pummeled with cruise ship waves. Such conditions deserve simple no-cook meals and dinners.

So I quickly made this meal with sweet corn, garbanzos, avocado, mango, dill, garlic powder, and a little lime juice. I thought these ingredients might be best for the unexpected chaos.

I just added these ingredients to two plates (photo below). That’s it.

I should emphasize that this meal tasted exquisite. But I realize it’s difficult to convince others to try something so simple-looking. And that’s okay.

This plate of food was extra impressive because it was super affordable, it satiated my hunger, and it made my belly feel perfectly full—yet somehow still light.

I love it when that happens.

Then we slept as best we could, while being tossed against the sides of the hull all night. Somehow, we never felt seasick. Could this meal score any higher?

Kitchen Tools

  • two dinner plates or bowls

  • two sporks

  • knife

  • can opener (for non-poptop cans)

Ingredients (Organic, GF, Vegan)

  • canned sweet corn

  • canned garbanzos

  • avocado

  • canned mango

  • dill (in glass jar)

  • garlic powder (in glass jar)

  • lime juice (in glass jar)

Recipe

  • open and drain sweet corn

  • place half the corn on each plate

  • open and drain garbanzos

  • place half the garbanzos on each plate

  • cut the avocado in half, toss the pit

  • squeeze half the avocado on each plate

  • open and drain mangos

  • place half the mango on each plate

  • sprinkle dill on garbanzos (to taste; I like a lot)

  • sprinkle garlic powder on garbanzos (if desired)

  • sprinkle garlic powder on avocado (a delicious must)

  • drizzle just a bit of lime juice on avocado

That’s it. Open, place, and serve.

This dinner was literally created on the go, in that unexpected moment, and has become a favorite quick and easy meal ever since.
